Hello! This is 'Cooking's Easy' channel and me, Olga Matvey. Today we'll cook sochniks - like the ones we grew up having with cottage cheese... Let's get started!.

We'll start with the sour cream. I use the 20% sour cream - not 15% one, because it's a bit more sour and thinner, so I take the 20% one, but you can use any. First let's beat the sour cream, you can add there a glass of sugar at once and stir. After 2-3 minutes of beating the sugar is half-melted, we add a pinch of salt and one egg. All the products we use including the egg should be of room temperature. Now we beat everything together with the egg..

The mass is now having so nice vanilla color. Add a piece of soft butter. It should have been kept at room temperature for several hours before used..

Now raise and put away the whisk. If there is no mixer, you can do it all with the usual whisk, like this one,.

Beat everything. Now it's time for flour. I sift it right into the dough and add soda here..

Now it looks like dough. We don't need the whisk any longer. Let's put the dough on the table..

I've prepared a silicone mat, and I'll use it for the dough. Now let's put some flour on the table - about 2-3 tablespoons of it, and put the dough on it. Make sure you don't take too much flour, put 2-3 tablespoons of it on the bottom, sop the dough into it so that it doesn't stick to the table and start kneading. Usually it takes much less flour afterwards, I'll show it to you..

Look: I've kneaded the flour that was on the table, and the dough is a bit sticky, and it sticks a little to my hands. I take some more flour. Usually you need to use some more tablespoons additionally.

So that the dough does not stick to your hands. Look, it still sticks to the table too much.

It shouldn't stick to your hands..

Now the dough doesn't stick either to the table or to my hands. There are no pieces of dough on my hands, but it's rather soft, not tight. Totally you are not supposed to use more than 400 grams (14 oz) of flour.

For the whole recipe. Now let's put the dough aside, and wrap it for some minutes into a plastic bag or cover with a saucer, and meanwhile we'll cook the stuffing. Take 1 egg. We need the albumen for the dough and that's why I'll separate it into this bowl to beat,.

And the yolk will be used to cover the ready sochniks before baking..

Look: the albumen is ready, now put 2 tablespoons of sugar here, and beat again until the sugar dissolves. The albumen is really thick now. I'll put it aside and take the cottage cheese. The cottage cheese should be dryish and not wet. I use well-pressed one..

Now I grind the cottage cheese with the fork, and mix the ready albumen with the cottage cheese..

We don't need the fork any longer, we'll use the silicon stick instead..

Now I stir everything very carefully and add a tablespoon of sour cream..

The albumen should be well kneaded in the cottage cheese..

Add a tablespoon of flour, so that the cottage cheese keeps its shape. Now we stir it with the flour and we've got such airy and lush mass..

That's it. We've stirred it, the stuffing is ready, the dough is ready as well, and it's time to put it all together. Divide the dough into 4 parts, it's going to be more convenient. Take one part of the dough and roll it like that. Now we need to roll it out.

So that it is 0.3 to 0.5 centimeters thick. I have such cooking shapes, 11 and 9 centimeters in diameter. But you can use a big cup instead..

Let's cut the circles..

The dough in the middle should be a bit thinner than on the edges. So I press it like that with my fingers..

Look, now it's a little bit thinner. Now put some stuffing right here, on one half. Now raise the opposite half of the dough and cover the stuffing like that..

Press on the edges a little bit..

The first sochnik is ready for baking. Transfer it with a knife or with such a wooden spatula. Prepare the baking tray by covering it with a parchment..

When the sochniks are ready for baking, we need to take the yolk and coat the sochniks with it. The yolk can be mixed with some milk. Preheat the oven by 356F, and place the baking tray with our sochniks there for 25 minutes. The baking temperature over the last 5 minutes should be 320F. Take the sochniks out of the oven and let them cool down. They should be served cold. Here are our sochniks, so amazing and appetizing! You wouldn't succeed to buy such sochniks at a store today. It's time to try them! Let's see how they look inside..
